Recipe: Non-alcoholic Mojito with mint and fresh lime

The mojito is one of the most loved long drinks in the world, and its non-alcoholic version loses nothing in freshness. The secret lies in the mint preparation technique.
Ingredients (1 glass)
- 8-10 fresh mint leaves
- 20ml fresh lime juice
- 15ml brown sugar syrup
- Soda or sparkling water to taste
- Crushed ice
Procedure
Place the mint leaves at the bottom of the glass along with the lime and syrup. Crush gently with a pestle, without crushing the mint too much (it risks becoming bitter). Fill with crushed ice, top with soda and stir from bottom to top. Garnish with a sprig of fresh mint and a slice of lime.
Because it works
The delicate crushing releases the essential oils of the mint without extracting the bitterness of the leaves broken too deeply: it is the difference between a balanced mojito and a cloying one.
